I recently updated 2 of my Raspberry pi's to bullseye and it has not gone well. First off, a crontab instruction that has worked well on jessie for a number of years, does not run.
Today I have tried to use VNC, again a feature that I have used successfully for many years and the windows within the Desktop are huge, so much so that they don't fit.
Has something changed in jessie that would cause this.
Any help would be greatly appreciated.
The answer to the Headline question "Can I go back to jessie" is certainly Yes.
All OS images ever released by Raspberry Pi are still available.

That seems confusing. Because by your own description you are now running RasPiOS Bullseye?
Was the installation of RasPiOS Bullseye from a fresh image provided by Raspberry Pi, or have you attempted an unsupported upgrade process between multiple versions of the OS?
The precise details of what you have done maybe significant.
Reverting from your current situation to running an OS based on Debian Jessie without performing a fresh installation may not be a viable option.
